Import, export and practical winemaking consultancy for independent producers

Dan Barwick

Dan’s career has spanned vineyard management and winemaking leadership, crafting wines that tell a story of place, precision, and passion. From cool-climate aromatic whites, Chardonnay and Pinot Noir to structured Bordeaux varietals, he has overseen every stage of the process–from grape to glass for 35 years. Now based in the UK, he is here to help wineries refine their vineyard practice, optimize winemaking techniques and navigate the shifting landscape of cool-climate viticulture.

"Dan is one of the most talented winemakers I know. His wines consistently demonstrate a remarkable balance of technical skill and artistic expression, and his deep knowledge of viticulture ensures that quality is present from grape to glass."

Precision from Vineyard to Bottle

Balanced Viticulture

Careful vineyard management ensures uniform ripening and optimal fruit balance, laying the foundation for quality wines.

Thoughtful Harvest Decisions

Picking is guided by both analytical data and sensory evaluation, ensuring grapes are harvested at their ideal moment.

Selective Pressing

Press fractions are separated through chemical analysis and sensory tasting to eliminate:

  • Excess phenolics and tannins
  • Undesirable bitterness and astringency
  • High potassium levels that increase pH
  • Highly oxidizable compounds

Precision Vinification

Balance in the finished wine is achieved through deliberate choices in:

  • Controlled oxidation
  • Yeast selection
  • Fermentation temperatures
  • Malolactic fermentation, guided by sensory trials

Aging & Final Expression

Aging on the lees and in tirage is closely monitored, followed by dosage trials to achieve harmony and finesse.

Total Traceability

Every stage of vineyard work and winemaking is fully documented, ensuring consistency, transparency, and excellence.
